Golden Beetroot Soup With Hazelnut And Mint
INGREDIENTS
For The Soup
100g butter
2 tbls extra virgin olive oil
6 medium golden beetroots, peeled and roughly diced
1 small onion finely chopped
2 sticks of celery finely chopped
1 tbls of finely chopped ginger
1 ltr of light chicken stock
salt and white pepper to taste
For The Pesto
100g hazelnuts, toasted and coarsely chopped
2 tbsp extra virgin olive oil
3 tbsp chopped fresh mint
30g of grated parmesan cheese
METHOD
1. In a heavy bottomed saucepan - gently soften onions, celery, ginger and beetroot over a medium heat; taking care not to brown.
2. When the onions and celery are cooked, add 2/3rd’s of the chicken stock and simmer until the beetroot is cooked.
3. Transfer the mixture into a blender and blend for a couple of minutes until completely smooth. If the soup consistency appears too thick, then add the reserved stock.
4. Meanwhile - in a separate bowl place all the ingredients for the pesto and mix well.
5. Pour the piping hot soup into a bowl and serve with a generous amount of pesto on top.
